Seasonal Soups and Salads

Create your recipes at the market ~ plan around organic and what's in season. Herbs, fresh chilies, tomatoes, or pumpkins and squash, legumes all make the base for a soups, entrees and fresh salads. Stroll your Farmers Market and group ingredients together as you plan menu items while you shop.

Watermelon Gazpacho with Avocado, cilantro, cucumber, green onion and crisp apple

Raw Carrot and Zucchini Noodles, fresh raw veggies, raw nuts and toasted sesame seeds, dressed in an Orange~Wasabi / Flax Oil Dressing

I call this Summer Harvest Stew prepared in stages. Grains, rice, legumes of your choice. Saute veggies in EVOO; carrot, celery, onion, garlic, portabella mushroom, fresh herbs, mixed greens
I built the salad with spinach and dried cranberries in mind, this gazpacho is a new recipe

Vegetable Soup inspired by a bowl of extra pieces that I cut up and steamed

Then I added layers of flavorful useful "compost" creating a broth

fresh tomatoes floating in broth

and a ladle of steamed veggies for a perfect early dinner
